Delaware County restaurant inspections
Comments on food-safety inspection violations conducted last week by the Delaware County Health Department of establishments with liquor licenses that had violations, which this week was eight of nine:
• Establishment has certified food manager, but not on site during time of inspection. Person in charge is not a certified food protection manager.
• Disposable paper towels not provided at the handwashing sink.
• Container of shellstock located in walk-in cooler without proper shellstock tag identification.
• Food establishment is not maintaining an approved record keeping system for shellstock tags.
• Chlorine sanitizer measured 0 ppm at sanitizer buckets. Maintain concentration at 50 ppm to 100 ppm
• Insect control device is over food or food preparation area. Insect control devises shall be installed so that: 1) they are not over food preparation areas, 2) dead insects or insect parts do not fall onto exposed food, equipment, utensils or single service items.
• Mouse droppings observed on flooring near water heater and electrical panel.
• Gaskets on the walk in cooler door are cracked.
• Soil residue/Ice Build Up present in walk-in freezer.
• Dust present on grates in walk in cooler.
• Handwashing sink blocked by bowl.
• Raw animal foods stored above ready-to-eat foods in reach-in refrigeration unit.
• Black debris present on soda gun nozzle in the bar area.
• Accumulation of black residue observed in the interior of ice machine.
• Facility is not in compliance with sushi rice HACCP plan.
• Food employees are not wearing hair restraints.
• Test kits or other devices are not available to the employees to measure sanitizing solution concentration.
• Dried mouse droppings present in the basement dry storage area.
• Soda syrup present on the floor in the bar area.
• Employees were found not using the designated employees lockers when storing personal articles. Personal bags stored in the food prep area.
• Disposable paper towels not provided at the hand washing sink in the pizza prep area.
• In-use utensils are stored incorrectly on oven handle.
• Dust and grease accumulation present on ventilation hood system filters.
• In-use wiping cloths are not stored properly.
• Various food items in the refrigerator not marked with a use-by date.
• Employee changed gloves without washing hands between tasks.
• Raw animal products (eggs) stored above ready-to-eat foods.
• Some prepared foods are not marked with a use-by date.
• Food storage containers are not labeled.
• German cockroaches observed on glue boards in the basement prep area.
• Visible evidence of rodent activity present (mouse on glue board) in the basement area.
• Basement vent opening has gaps between slats.
• Single-use articles (takeout containers) are stored incorrectly.
• Various microwaves found in use on-site do not meet ANSI/NSF sanitation standards.
• Bricks supporting cold-hold unit are not smooth and easily cleanable.
• Nonfood-contact surfaces of type two steam hood above dishwashing machine have rusted or are no longer easily cleanable.
• Gaskets on the coolers are cracked and soiled.
• Food-contact surfaces of meat band saw have rusted or are no longer easily cleanable.
• Shelving in some walk-in coolers are rusted.
• Flooring was found in a state of disrepair, or not smooth and easily cleanable.
• Maintenance tools stored on the floor and not elevated on a utility rack when not in use.
• Liquid hand soap not provided at the handwashing sink.
• Disposable paper towels not provided at the hand washing sink.
• Date marking is not provided on the food in the refrigerator and freezer.
• A thermometer is not provided in the freezer.
• Food storage containers are not labeled.
• The women’s restroom lacks a covered receptacle for disposal of feminine hygiene products.
• Floors in the food prep area were found in a state of disrepair, or not to be smooth and easily cleanable.
• Observed food storage containers are not labeled (brown sugar, salt).
• Door being propped without a screen to prevent entry of pests.
Most of the violations are handled on the spot and a few require follow-up visits. Seven of the nine were routine inspections.
The Minella’s Diner inspection was a follow-up to an inspection two weeks ago that found more than 20 violations. Ristorante La Locanda was a follow-up from four weeks earlier with many fewer violations. Both of the initial inspections were prompted by complaints.
Clean bill of health: The Fainting Goat, 105 S. McDade Blvd., Glenolden, was the only one of the nine inspections this week with no violations. A few others were nearly perfect.
No inspections were reported through the Pennsylvania Department of Agriculture website by the Delaware County townships that don’t rely on the county health department.
